peanut butter chocolate chip granola bars

I’ve been working on a homemade granola bar recipe for the past few months and I think I’ve finally worked it out and I’m super excited to share it with you! These are so wonderfully easy that I make them in the evening after dinner.

  • 2 cups oatmeal
  • 2 cups rice krispies
  • 3/4 cup honey
  • 3/4 cup milk chocolate chips
  • 1/2 cup peanut butter (we use fresh ground peanut butter which is slightly less sweet than the store bought kind so you may need to adjust your honey quantity)

Mix the oatmeal and rice krispies together in a great big bowl. Make a large well in the centre and pour in the honey, mixing it in slowly. Add the chocolate chips and peanut butter and stir until combined.  Pour mixture into an ungreased 8×8 baking pan. Wet your fingers and press really firmly into the pan, going over the whole dish about three times. Chill overnight, cut into squares, and keep refrigerated.

    I really love granola bars, yet always feel less than take care of after a store bought one. Somehow, they are more like candy to me, making me want to eat many in order to feel satisfied (or sick).

    Whatever prompted you to devise your own. Did you start from a basic recipe and edit?

      For starters I don’t like all the packaging that comes with store-bought granola bars, plus I figured this way we can tweak them as we wish and have them anytime we want. We were really enjoying the Fibre One bars so I wanted to make something somewhat similar.

      This first few times I tried to make granola bars at home I was working from other recipes but they were never really what I was looking for – I wasn’t interested in using flour or baking soda, just chunks of goodies. Then I stepped back, thought about the basic ingredients I wanted to use (rice krispies, oats, honey, peanut butter, and chocolate chips) and went from there. Plus I wanted them to be easy so that I’d actually make them frequently, thus the no bake.
