Have I mentioned how much I love Valentine’s Day? A whole day dedicated to nothing other than loving the most important person in my world? Sign me up!
Last year Darren and I celebrated our love with handmade cards, homemade almond butter cups, and a chocolatey scavenger hunt. We spent the afternoon drinking craft beer, daydreaming, and making a decadent dinner together. Clearly we like love our food.
But this year is going to be different. We’re smack dab in the middle of Whole30. So that leaves us with handmade cards, almond butter (without the chocolatey cup), a scavenger hunt (without the sweet treats), and dinner.
No chocolate on Valentine’s Day. What’s a girl to do?
What better time than to try out the Whole30 date night menu? {Page 362 of the book}
Beverage – Orange and mint infused water
Appetizers – Cabbage, kale, and bell pepper slaw with apple cider vinaigrette, and lemon chicken skewers
Entrees – Seared scallops with ginger-blueberry sauce and coconut cauliflower rice
More Simple Valentine’s Day Ideas
But then I got to thinking, what are some other simple things I can do to make this Valentine’s Day a little more special without all the sweets?
- decorate the house with everything I can dig out that’s heart shaped, or red, pink, or white
- red beaded garland
- kitchen linens
- bedding
- sneak little love notes into Darren’s pockets
- using my heart shaped cookie cutter I can cut:
- potato slices and roast them in the oven
- melon and pineapple for finger foods
- apple slices and dip them in almond butter
Am I going to miss my sweet treats this year? Absolutely! But I’m happier to have someone so wonderful and supportive by my side.
